- Piacentinu DOP: Approximately 8oz. A rare cheese that is produced exclusively in Sicily, Piacentinu is most noted for its striking yellow color which results from the addition of saffron during the cheese-making process. In typical Sicilian fashion, this sheep’s milk cheese from Enna is flavored with whole black peppercorns. Still made by hand using ancient traditions, Piacentinu is crafted using antique tools and wooden vats. Aged for three months, it has a mellow yet distinct flavor and a dry texture. Best if consumed within 2 months from receipt of goods.
- Buenalba with Wine: Approximately 8oz. Purple cheese? It’s real! This Spanish cheese is no gimmick, but an artisan goat’s milk cheese that is not just soaked in wine, but has red wine from Cencibel added to the milk before the curd is set. This gives the cheese a deep violet hue and a sweet fruit aroma. Aged for 6-8 months, Buenalba with Wine has a texture similar to Manchego, but with a flavor that mixes smooth berry flavors with the taste of aged goat’s milk. Best if consumed within 2 months from receipt of goods.
- Mimolette – 6 Month: Approximately 8oz. If youre a fan of the French version of Mimolette, this Dutch version is a great alternative. Serve with sliced apples, bread, or heat for a delicious cheese toastie! Mimolette is a unique cultural transplant of a cheese, with a history thats changed with national borders. Mimolettes story starts with Flemish cheesemakers who missed their Dutch cheeses, which were banned by French law under King Louis XIV. They tried to recreate these cheeses, including Edam. This Edam-style cheese was dubbed Mimolette and was soon popular throughout France. As time went on Mimolette became famous across Europe; so famous that the Dutch decided to recreate French Mimolette back in Holland. So a French copy of a Dutch cheese is now being copied itself by the Dutch! Best if consumed within 2 months from receipt of goods.
- Mountain Gorgonzola: Approximately 8oz. From Italy’s Lombardy region, we present Mountain Gorgonzola, a sharp and tangy cheese. Like many cheeses, this cheese takes its name from the local town where it was created, Gorgonzola, just south of Milan. Not as sharp as Roquefort or as pungent as Stilton, Mountain Gorgonzola is a consistently delightful cheese that will convert even non-blue cheese eaters into fans. With its white interior laced with streaks of blue, Mountain Gorgonzola is an attractive table cheese and a savory ingredient in your favorite salad. Gorgonzola takes very well to fruits, especially figs and pears. Or – try it the Italian way alone on a plate drizzled with honey. Best if consumed within 1 month from receipt of goods.
- Red Dragon: Approximately 8oz. Red Dragon is a buttery and spicy cheese with plenty of bite, but is not too hot. Not only do the mustard seeds give Red Dragon its marvelous flavor, but also its texture. The brown ale makes the cheese moist and tangy. Popular platter cheese; Red Dragon melts easily and is at home on burgers, grilled pork & chicken; melt into sauces and on potatoes. Pairing: Hearty Ale. Best if consumed within 2 months from receipt of goods.
