- Duck Rillettes by Les Trois Petits Cochons: 7oz. Rillettes is a combination of shredded meat and duck fat seasoned and cooked confit-style. Made of duck pork and duck fat. Originally this dish was made of pork and a staple of many poor family’s diets. They would roast either a fatty pork belly or put a tough pork shoulder in a pot with some cubed backfat. As the meat slowly cooked the fat would render out into the pot. After eight or ten hours of cooking the meat would be fall-off the bone tender and infused with the flavorful fat.
